Winter is long gone by now, and summer is just around the bend. It’s a time to gather around the bonfire or invite your friends over for an outdoor brunch.
And what’s brunch without a signature cocktail? The grapefruit & mint Bellini is a unique twist on the traditional mimosa for springtime brunch.
Grapefruit
The astringent quality of grapefruit makes it an excellent ingredient for cleansing both the body and the spirit.
Although it’s generally a later-season fruit, its bright, fresh flavor call to mind the newness of spring.

The combination of mint with grapefruit is an unexpected twist on the traditional peach Bellini, but trust us, it works!
Prosecco
The bubbling effervescence of champagne is a symbolic nod to fairy magic, which is especially potent during the seasons of late spring and early summer.
You can substitute any bubbly beverage for the same effect, including champagne, sparking wine or club soda (if you want an alcohol-free option).
Ingredients
*1/2 cup sugar
*1/2 cup water
*1 cup fresh mint
*3 cups freshly squeezed grapefruit juice
*1 bottle of Prosecco (or any sparkling wine, or substitute club soda if you want a mocktail)
Step 1
In a small saucepan over medium heat, dissolve sugar in water, whisking constantly. Lower the heat and add fresh mint leaves. Allow them to steep for 2-3 minutes.
Step 2
Remove from heat. Strain out the mint leaves and place the syrup in a clean, glass jar. Place it in the refrigerator to cool for several hours (or overnight).
Step 3
Divide the syrup into 6 champagne flutes and top with champagne, sparkling wine or (for alcohol-free) club soda.
Garnish with slices of grapefruit and mint leaves. Serve and enjoy!
