Mint
The cool, crisp flavor of mint is the secret ingredient in this magical concoction. The combination of lemon and mint is bright and breezy—just like a warm summer day. Wildflower Honey
The Summer Solstice is associated with both wildflowers and honey.
Wildflower honey specifically connects to fairy lore associated with this season. Many practitioners leave out dishes of honey or honey cakes as a symbolic offering to these mythical creatures in hopes of deepening their connection to the mysteries of nature and the universe.
Ingredients
*1 1/2 white sugar
*3 tablespoons wildflower honey
*fresh juice of 9 lemons
*7 cups ice-cold water
*ice
*optional: 7 ounces of vodka
Directions
- In a medium saucepan, bring water to a low boil. Stir in sugar and wildflower honey until dissolved completely.
- Reduce heat and add lavender flowers and mint and allow the herbs to steep for 5-7 minutes. The longer you allow them to steep, the stronger the flavor will be.
- Add ice to a large pitcher and pour the water in. Add herbal syrup and stir.
- Optional: If you want to make this a cocktail, add vodka.
- Serve immediately and garnish with fresh mint leaves, lavender flowers or slices of lemon.
